Scalloped Potatoes And Ham - cooking recipe
Ingredients

2 Tbsp. margarine
3 Tbsp. flour
1/2 tsp. dry mustard
1/4 tsp. salt
1/8 tsp. pepper
1 3/4 c. skim milk
3 c. thinly sliced, pared potatoes (about 3 medium)
1 c. diced fully cooked extra lean ham
1/4 c. finely chopped onion
Preparation

Spray 2-quart casserole with nonstick cooking spray.
Place margarine in 4-cup Pyrex measure.
Microwave uncovered on High 15 to 30 seconds or until melted.
Stir in flour, mustard, salt and pepper until margarine is absorbed.
Gradually stir in milk. Microwave uncovered 4 to 5 minutes, stirring after every minute, until thickened.
Layer 1/3 of the potatoes, 1/2 of the ham, 1/2 of the onion and 1/3 of the sauce; repeat the layers.
Top with remaining potatoes and sauce.
Cover tightly and microwave on Medium High (70%) 16 to 20 minutes, stirring every 5 minutes, until potatoes are tender.
Sprinkle with paprika if desired.
Makes 4 servings.
