Eggplant Casserole - cooking recipe

Ingredients
    1 large eggplant
    2 Tbsp. butter
    1/2 c. onion, chopped
    1 can tomatoes
    1 tsp. salt
    1/4 tsp. pepper
    2 c. corn bread crumbs
    2 eggs, beaten
    1/2 c. evaporated milk
    1/4 lb. grated Cheddar cheese
    toasted bread crumbs
    1 stick oleo
Preparation
    Peel and saute eggplant in 2 tablespoons butter until tender. Drain and mash.
    Mix in order given.
    Pour into baking dish.
    Top with 1 cup toasted bread crumbs with 1 stick oleo.
    Bake at 250\u00b0 until brown.
