Potato Chowder - cooking recipe

Ingredients
    3 c. diced potatoes
    1/2 c. diced celery
    1/2 c. chopped onion
    1 shredded carrot
    water to cover
    1 c. ham, finely diced
    1 c. Velveeta, diced
    4 c. milk
    seasonings to taste
Preparation
    Cook vegetables in water until tender; add ham (I sometimes use part summer sausage), cheese and milk.
    Simmer gently until cheese melts.
    May be thickened, if desired.
    Garnish with parsley on side and croutons afloat.
