Macque Choux(Cajun Smothered Corn) - cooking recipe

Ingredients
    12 ears fresh corn
    2 Tbsp. vegetable oil
    1 Tbsp. butter or margarine
    2 large tomatoes, peeled and chopped
    1 medium size green pepper, chopped
    1 clove garlic, minced
    1 Tbsp. sugar
    1 tsp. salt
    1/4 tsp. pepper
    1/4 tsp. hot sauce
Preparation
    Cut off tips of corn kernels into a bowl.
    Scrape milk and remaining pulp from cob with a knife.
    Set aside.
    Combine oil and butter in a large skillet over medium heat until butter melts. Add corn, tomatoes and remaining ingredients and cook, stirring constantly, 5 minutes.
    Reduce heat; cover and cook 20 minutes, stirring occasionally.
    Makes 8 servings.
