Fat-Free Banana Crunch Muffins - cooking recipe
Ingredients

1 c. all-purpose flour
1/2 c. wheat and barley cereal (Grape-Nuts)
1 c. sugar
1/2 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
2 medium size ripe bananas (mashed, approximately 1 c.)
1/2 c. plain nonfat yogurt
1/4 c. (thawed if frozen) no cholesterol egg substitute
1/2 tsp. vanilla extract
Preparation

Preheat oven to 350\u00b0.
Spray regular size muffin pans with nonstick cooking spray.
In a medium bowl, mix first 6 ingredients.
In a large bowl with wire whisk or fork, mix bananas, yogurt, egg substitute and vanilla extract.
Stir in flour mixture just until moistened.
Spoon batter into muffin pan cups and bake 30 minutes.
