Fillet Of Sole Provencal - cooking recipe

Ingredients
    1/2 to 3/4 lb. sole fillets
    1 Tbsp. lemon juice
    1 Tbsp. olive oil
    1 sm. tomato, thinly sliced
    1/4 tsp. whole basil
    1/8 tsp. salt
    pepper to taste
    1 sm. onion, thinly sliced
Preparation
    Place fish in sprayed 9 x 13 baking dish.
    Combine juice and oil and drizzle over fish.
    Top with slices of tomato and onion. Combine all spices and sprinkle on top of tomatoes and onion. Bake uncovered 10-15 minutes or until fish flakes with fork. Serves 2.
