Ham-Zucchini Stir-Fry - cooking recipe

Ingredients
    4 Tbsp. vegetable oil
    3/4 lb. baked ham, sliced 1/4-inch thick, then cut into thin strips
    3 medium zucchini, cut into 1/4-inch thick slices
    4 carrots, cut into 1/4-inch thick slices
    1 medium red bell pepper, chopped
    1 large onion, chopped
    3 Tbsp. water
    1/2 c. chicken broth
    2 Tbsp. soy sauce
    2 Tbsp. dry sherry
    2 garlic cloves, minced
    1/2 tsp. ground ginger
    1 tsp. sugar
    1 Tbsp. cornstarch
Preparation
    In a wok or 10-inch skillet, heat 2 tablespoons oil over medium-high heat until hot.
    Add ham and stir-fry until lightly browned, 1 to 2 minutes.
    Remove to a plate.
    Add remaining 2 tablespoons oil to pan and, when hot, add zucchini, carrots, red pepper and onion.
    Stir-fry until onion is softened, about 3 minutes.
    Add water; cover and cook 2 to 3 minutes until carrots and red pepper are crisp-tender.
