Grandma Ruthie'S Cranberry Nut Bread - cooking recipe

Ingredients
    2 c. bread flour
    1 c. sugar
    1 1/2 tsp. baking powder
    1/2 tsp. baking soda
    1 tsp. salt
    1/4 c. margarine
    3/4 c. orange juice
    1 Tbsp. grated orange rind
    1 egg, lightly beaten
    1/2 c. walnut or pecan pieces (optional)
    1 c. frozen whole cranberries (1/2 bag)
Preparation
    Makes 1 large (9 x 5-inch) or 2 small (7 x 3-inch) loaf pans. Line the pan(s) with greased wax paper.
    In a mixing bowl stir together the dry ingredients.
    Cut the margarine into the dry mixture.
    In a separate bowl, combine the orange juice, grated rind and egg.
    Pour the liquid mixture into the dry and mix just enough to dampen; do not beat.
    Fold in the nuts (if adding) and cranberries.
    The mixture will be stiff and hard to stir.
