Pickled Mushrooms * - cooking recipe
Ingredients

1 lb. button mushrooms
1/2 c. olive oil
1/2 c. white vinegar
2 crushed garlic cloves
1 tsp. salt
1 tsp. oregano
1/2 tsp. dried, crushed red pepper (optional)
Preparation

Wash mushrooms in cold water.
Cut stems flush with caps. Drain.
Drop into boiling salted water.
Simmer five minutes. Drain.
Place in bowl.
Combine all other ingredients and pour over mushrooms.
Let stand at least one hour or up to four hours in refrigerator, covered.
Drain marinade and continue refrigerating until served.
