Vegetable Lasagna - cooking recipe
Ingredients

1 tsp. shortening, vegetable spray or oil
3 Tbsp. oil
1 (at least) garlic clove
2 c. mushrooms, cleaned and sliced
2 c. green pepper, seeded, cored and sliced
12 to 16 oz. spinach, well washed, rinsed, drained and chopped (I've used chopped, frozen and it works)
2 eggs, beaten, or equivalent of Egg Beater type
1 lb. tofu, drained and crumbled
3/4 tsp. oregano
3/4 tsp. garlic powder
1/2 tsp. salt
1/8 tsp. pepper
1/4 c. fresh parsley (at least), washed, dried, stems removed and rinsed
5 c. Marinara sauce or tomato sauce (canned or homemade)
12 oz. lasagna noodles, cooked
1 lb. Mozzarella cheese (light skim), shredded
3 oz. fresh Parmesan cheese, shredded or grated
Preparation

Spray 9 x 13-inch baking dish with shortening or vegetable spray/oil.
