Seafood Gumbo - cooking recipe

Ingredients
    1 lb. okra, sliced
    4 Tbsp. shortening
    2 Tbsp. flour
    1 onion, chopped
    1 bunch green onions, chopped
    1/2 c. celery, chopped
    1 (1 lb.) can tomatoes
    2 sprigs parsley, chopped
    1 bay leaf
    1 sprig thyme
    2 qt. water
    salt and pepper to taste
    1 lb. shrimp, raw
    1/2 lb. crab meat or 1 doz. crabs
    1 tsp. file (if desired)
Preparation
    Fry okra in 2 tablespoons shortening.
    In a
    large pot, make roux by cooking 2 tablespoons shortening and 2 tablespoons flour until dark brown. Add onions and celery to roux.
    Cook until soft, about 5 minutes. Add okra.
    Stir in tomatoes, parsley, bay leaf, thyme and water. Simmer 30 minutes. Add peeled, deveined shrimp and crabs.
    Simmer 15 minutes.
    Serve over steamed rice.
