Dora Allin'S Scalloped Eggplant Casserole - cooking recipe

Ingredients
    3 medium eggplants, peeled and cut up
    1/2 stick butter
    1/2 onion, grated
    3 eggs
    1 c. milk
    1 c. fine cracker crumbs
    1 c. grated cheese
    salt and pepper to taste
Preparation
    Boil eggplant until soft, drain.
    Add butter, salt and pepper, mixing well.
    Beat the eggs into the milk and add to eggplant. Add cracker crumbs and 1/2 cup of the cheese.
    Mix well and pour into a greased casserole dish.
    Bake at 350\u00b0 until it is firm throughout, about 45 to 50 minutes.
    During final 10 to 15 minutes, add remaining cheese to melt on top.
