Beet Pickles - cooking recipe

Ingredients
    2 qt. vinegar
    2 c. water
    2 c. sugar
    2 or 3 Tbsp. pickling spice
    6 or 7 lb. beets
Preparation
    Cook beets until tender; peel and cut to size.
    Bring vinegar, water, sugar and spice to a boil.
    Add beets; cook for 5 minutes. Pack and seal.
