African Meat Loaf - cooking recipe

Ingredients
    1 lb. ground beef
    3/4 c. cracker meal
    3 eggs, beaten
    1 1/2 tsp. salt
    2 c. chopped peanuts (I use raw)
    1 lb. ground lean pork
    1/2 c. chopped onion
    1/2 tsp. ground pepper
    2/3 c. brown sugar
Preparation
    Mix together beef, pork, cracker meal, eggs, onion, salt, pepper, 1 1/4 cup peanuts and brown sugar.
    Combine remaining peanuts and brown sugar.
    Grease 9-inch loaf pan heavily; line bottom and sides with brown sugar mixture.
    Fill with meat mixture.
    Bake at 375\u00b0 for 1 1/4 hours.
    Turn out carefully onto platter, glazed side up.
    Serves 8 to 10.
    I spray with Pam spray before greasing.
