Cheesy Tortillas - cooking recipe

Ingredients
    1 pkg. 10 corn tortillas
    1 c. Longhorn cheese, grated
    2 eggs, beaten
    1/4 c. chopped onion
    1/4 c. chopped green pepper
    1/2 c. milk
    salt and pepper
    1 chopped tomato
Preparation
    Fry tortillas and onions in 3 tablespoons oil in a large frying pan.
    Scramble eggs and milk; pour over tortillas and toss quickly.
    Add cheese and continue to toss.
    Add salt and pepper and diced tomatoes.
    Simmer 5 minutes on low heat.
    Serve with Mexican style beans.
