Frijoles Colorados - Red Beans - cooking recipe
Ingredients

1 bag small dry red beans
1 ham hock
1 piece beef, short rib or flank
3/4 green pepper
1/4 cap olive oil
1 small can tomato sauce
2 cloves garlic
1 bay leaf
1 Tbsp. oregano
1 tsp. sugar
1 Tbsp. vinegar
salt and pepper to taste
1 chorizo (optional)
Preparation

Soak beans overnight covered in water.
Or use quick softening method:
bring beans to boil, boil for 5 minutes, cover and turn off heat.
Let beans sit for 1 hour and then begin recipe.
Make sure beans are covered by 2 fingers of water.
Cook beans on simmer with meat until tender.
In small frying pan, saute onion, green pepper and garlic in the olive oil with bay leaf.
Be careful not to burn garlic.
Add can of tomato sauce and the remaining ingredients.
Stir to mix well and add to beans.
Continue to cook beans until seasoning is well absorbed and beans are soft.
If using chorizo, add whole to sauce before adding to beans.
