Coconut Shrimp With Sweet Dipping Sauce - cooking recipe

2 lb. unpeeled medium-size fresh shrimp
2 c. all-purpose flour, divided
1 (12 oz.) can beer
1/2 tsp. baking powder
1/2 tsp. paprika
1/2 tsp. curry powder
1/4 tsp. salt
1/4 tsp. ground red pepper
1 (14 oz.) pkg. flaked coconut
vegetable oil
Sweet Dipping Sauce
Preparation

Peel and devein shrimp, leaving tails intact. Combine 1 1/2 cups flour, beer and next 5 ingredients. Dredge shrimp in remaining 1/2 cup flour; dip in beer batter and roll in coconut. Fry shrimp in deep hot oil (350\u00b0) until coconut is golden brown. Serve shrimp with Sweet Dipping Sauce. Yields 6 servings.
