Broccoli Soup - cooking recipe

Ingredients
    4 Tbsp. butter
    1/4 c. flour
    1/4 c. onion, chopped
    2 to 3 c. milk
    broccoli pieces
    1/2 c. Cheddar, shredded (optional)
    salt and pepper to taste
Preparation
    Melt butter in soup pot over medium heat. If using onions, saut onions in the butter until translucent; add flour and stir and cook over low for about 1 minute. Gradually add 2 cups of milk, stirring constantly and heat through. Add more milk as needed to obtain a creamy consistency. Add cheese if desired. Add salt and pepper to taste.
