Country Giblet Gravy - cooking recipe

Ingredients
    turkey drippings from roasting pan (broth and fat)
    1/3 c. flour
    2 1/2 c. turkey, giblet stock (recipe follows) or canned chicken or turkey, broth
    2 Tbsp. Dijon mustard
    1/4 tsp. salt
    ground black pepper
    chopped, cooked giblets and neck meat (optional)
Preparation
    Remove turkey from roasting pan.
    Pour pan drippings into large measuring cup, fat will rise to top.
    Return 4 tablespoons fat to roasting pan.
    Discard remaining fat.
    Reserve broth (about 1 1/2 cups).
