Linguine With Triple Red Pepper Sauce(Double Ingredients For 2) - cooking recipe

2 Tbsp. olive oil
2 large garlic cloves, chopped
1 red bell pepper, diced
1 1/2 tsp. dried crushed red pepper
1 (7 oz.) jar roasted red peppers, drained and diced
1/2 lb. linguine, cooked 1/2 c. grated Parmesan cheese
1/4 c. chopped fresh parsley
additional grated Parmesan cheese
Preparation

Heat oil in heavy large skillet over medium-high heat.
Add garlic, bell pepper and crushed red pepper; saute until bell pepper softens, about 5 minutes.
Remove from heat.
Add roasted peppers, linguine and 1/2 cup Parmesan; toss until coated.
Season with salt and pepper.
Divide pasta among 4 plates.
Sprinkle with parsley and serve, passing additional Parmesan cheese separately.
