Eggplant Casserole - cooking recipe

Ingredients
    1 medium eggplant
    1 c. cheese
    1 c. saltine crackers
    2 or 3 eggs (depends on size)
    1 1/2 c. milk
    salt and pepper
Preparation
    Peel eggplant.
    Salt and pepper; cut into squares.
    Cook 5 or 6 minutes.
    Drain.
    Mix cheese, crackers, eggs and milk; stir thoroughly.
    Bake in a greased casserole pan for 35 to 40 minutes at 350\u00b0.
    Serves about 5 to 6.
