Lobster Newburg - cooking recipe

Ingredients
    1/4 c. reduced fat butter
    3 T. flour
    1/2 t. salt
    1/2 t. dry ground mustard spice
    1/4 t. pepper
    2 c. skim milk
    2 c. cut up cooked lobster
    2 T. apple juice
Preparation
    Melt butter in a 3 qt. saucepan over medium heat.
    Stir in flour and spices; stir constantly and cook until smooth and bubbly.
    Stir in milk and boil for 1 minute.
    Stir in lobster and juice.
    Serve hot inside split popovers.
