Hampton Roads Crab Cakes - cooking recipe

Ingredients
    1 lb. crabmeat
    1 egg
    2 Tbsp. mayonnaise
    1/4 tsp. dry mustard
    dash of red pepper
    3 Tbsp. green pepper, finely chopped
    cracker meal (for breading)
    oil (for frying)
Preparation
    In medium bowl mix
    egg,
    mayonnaise, green pepper, dry mustard and red pepper.
    Beat with a wire whisk until blended. Gently fold in crabmeat so it
    will
    still be in chunks.
    Pour some cracker meal on
    wax
    paper.
    Form
    patties
    and
    lightly bread before frying.
    Cook until
    golden brown.
    Yields 4 to 6 patties.
