Irish Potato Casserole - cooking recipe

Ingredients
    1/4 c. margarine
    1/4 c. flour
    2 c. milk
    1 tsp. salt and pepper
    1 large pkg. grated Cheddar cheese
    6 or 8 potatoes
Preparation
    Boil potatoes in jackets.
    Let cool; cut into chunks.
    Melt margarine in large saucepan.
    Add flour; stir well.
    Add milk; let thicken.
    Add salt and pepper.
    Stir in grated cheese until melted in mixture.
    Blend in pimento.
    Pour over the potatoes.
