Eggplant Casserole #1 - cooking recipe
Ingredients

1 large eggplant, cooked, drained and mashed
1 (8 oz.) pkg. sharp cheese, grated
4 eggs
1/2 tsp. pepper
1 stick margarine
1 1/2 c. milk
1 1/2 c. cracker crumbs
1 tsp. salt
1 can LeSueur peas, drained
sprinkle of garlic salt
1 can sliced water chestnuts, drained
1 can mushroom soup, undiluted
grated cheese
1 can onion rings, crushed
Preparation

Cover with foil (shiny side out).
Bake at 350\u00b0 for 20 to 30 minutes.
If onions need browning, take foil off for a few minutes.
