New Potatoes By Mary - cooking recipe

Ingredients
    3 lb. small new potatoes
    boiling water
    1 tsp. salt
    1/2 c. butter or margarine
    3 Tbsp. lemon juice
    2 Tbsp. finely chopped chives or parsley
Preparation
    Scrub the potatoes and peel a strip of skin from around the center of each potato, about 1/2-inch wide.
    Place the potatoes in a pan and add boiling water to a depth of 2-inches.
    Add 1/2 teaspoon salt.
    Bring to a boil.
    Cover; boil gently for 20 minutes or until the potatoes are tender.
    Drain.
    Return to the heat for several minutes to dry out.
