Taco Topped Potatoes - cooking recipe

Ingredients
    4 large baking potatoes
    1 lb. ground beef
    1/2 c. chopped onion
    1 (1 1/4 oz.) pkg. taco seasoning mix
    3/4 c. water
    1 c. taco sauce
    1/2 c. (2 oz.) shredded cheese (Monterey Jack cheese with peppers)
Preparation
    Scrub potatoes; prick several times with fork.
    Microwave until done; let stand 2 minutes.
    Brown the ground beef and onion in a large skillet, stirring until beef crumbles; drain.
    Stir in seasoning mixture and water; bring to a boil.
    Reduce heat; simmer, stirring occasionally, for 15 minutes, or until liquid evaporates.
    Stir in taco sauce; cook until thoroughly heated. Cut an \"X\" to within 1/2-inch of bottom of each potato.
    Squeeze potatoes from opposite sides and ends to open.
    Fluff potato pulp with fork.
    Spoon meat mixture on potatoes; sprinkle with cheese. Yields 4 servings.
