Navy Bean Soup - cooking recipe

Ingredients
    1 lb. dried navy beans
    3 or 4 smoked ham hocks
    3 or 4 leaf end celery ribs
    1 onion (whole)
    3 cloves fresh garlic, crushed and minced
    3 large carrots
    salt and pepper to taste
Preparation
    Wash beans and soak in water for 2 to 3 hours.
    Drain water from beans and add 1 gallon fresh water.
    Add whole onion, celery leaves, ham hocks and garlic.
    Bring to a gentle boil and continue cooking this way for 2 hours.
