Eggplant Casserole - cooking recipe

Ingredients
    1 medium eggplant, pared
    2 Tbsp. butter
    2 well beaten eggs
    1/2 c. bread crumbs
    1 small onion, chopped
    1/2 tsp. salt
    1/4 tsp. pepper
    1/3 c. Parmesan cheese
Preparation
    Cook eggplant in a little water; mash.
    Beat well.
    Saute onion in butter.
    Add to mashed eggplant with salt and pepper. Turn into greased 1-quart casserole.
    Top with bread crumbs and cheese mixed together.
    Bake in preheated oven at 375\u00b0 for 30 minutes.
    Serves 4.
