Ingredients

1 1/2 c. cooked rice
1 egg, beaten
1/2 c. shredded Cheddar cheese
1/3 c. tomato sauce (I used spaghetti sauce)
1/4 tsp. each: basil leaves, garlic powder and oregano
1 Tbsp. Parmesan cheese
1 c. shredded Mozzarella cheese, divided
2 oz. pepperoni, sliced thin
1/2 c. each: fresh mushrooms and green peppers
1 Tbsp. fresh parsley (dried can be used)
Preparation

Mix rice, egg and Cheddar cheese.
Press into a 10-inch pie plate.
Bake at 400\u00b0 for 4 minutes or microwave for 2 minutes.
