Zucchini Jelly - cooking recipe
Ingredients

16 c. zucchini, peeled, seeded and shredded
6 c. sugar
1 c. crushed pineapple (undrained)
2 Tbsp. lemon juice
2 small boxes apricot Jell-O
Preparation

Boil zucchini in 1 1/2 cups water for 2 to 6 minutes.
Drain. Add sugar, pineapple and lemon juice. Boil 6 minutes.
Add Jell-O and boil 2 minutes. Put in jars and cool, then put in freezer.
