Eggplant Bhorta - cooking recipe

Ingredients
    1 large eggplant
    1 tomato
    1 small onion
    1 clove garlic
    1 1/2 Tbsp. oil
    1/2 tsp. salt
    1/2 tsp. sugar
    1/4 tsp. black pepper
    coriander leaf (optional)
Preparation
    Cut the bottom part of the eggplant with stalk to discard it. Wash the eggplant and boil it in water by cooking in microwave at High energy for 9 minutes.
    Drain the water by a colander.
    Peel the eggplant and mash it.
    Cut the tomato into small pieces, onion and the clove of garlic should be minced and kept ready.
