Skillet Barbecued Chicken - cooking recipe
Ingredients

1 fryer chicken, cut up
1 tsp. salt
1/8 tsp. black pepper
oil to depth of 1-inch in frypan
1 large onion, chopped
1/4 c. oil
1 (8 oz.) tomato sauce
1/2 c. water
1/4 c. brown sugar
3 Tbsp. Worcestershire sauce
2 Tbsp. prepared mustard
2 tsp. salt
1/4 tsp. pepper
1/4 c. lemon juice
Preparation

Season and cook chicken in covered skillet for 15 minutes in moderately hot oil.
Remove cover and brown chicken pieces.
Remove chicken just long enough to pour off oil, keeping in browned bits. In separate pan, cook onion in oil until tender.
Add all of remaining ingredients and simmer for 15 minutes.
Pour sauce over chicken in skillet.
Cover and simmer for 30 minutes to let flavors mingle and ripen.
Serve with plain boiled potatoes.
Makes 4 servings.
