Basic Brown Soup Stock - cooking recipe
Ingredients

bare bones (not meaty soup bones, ask butcher for fresh rendering bones)
yellow onions
carrots
chopped celery
Preparation

Place bare bones in a roasting pan, and roast at 425\u00b0, without lid, for 2 hours.
Place the roasted bones in a large soup pot. Add unpeeled vegetables: chopped celery, yellow onions and carrots.
(Yellow onion skins give color to stock.)
Bring to heavy simmer and cook for 8 hours.
Strain stock and store.
