Kerri'S Pink Tortellini - cooking recipe

Ingredients
    4 Tbsp. butter or margarine
    1/4 c. finely minced onion
    1 can (14 oz.) Italian tomatoes, drained and seeded
    1 Tbsp. chopped fresh basil
    1/4 tsp. salt
    3/4 c. heavy or whipped cream
    1 pkg.(15 oz.) fresh or frozen cheese tortellini
    freshly grated Parmesan cheese
    fresh ground pepper to taste
Preparation
    In saucepan melt butter over medium heat.
    Add onion and saute until translucent (about 5 minutes).
    In blender puree tomatoes until smooth.
    Add pureed tomatoes, basil, salt and pepper to saucepan.
    Reduce heat to low; simmer 10 minutes. Whisk in cream. Simmer 5 minutes more.
    Meanwhile, cook tortellini according to package directions.
    Transfer to a warm serving bowl.
    Add sauce, toss well.
    Sprinkle with Parmesan cheese.
    Makes 4 servings, 560 calories each.
