Warm Scallop And Rice Salad - cooking recipe

Ingredients
    1/4 c. sliced leeks
    1/4 c. diced red bell pepper
    1 clove garlic, sliced
    2 oz. uncooked brown rice
    5 oz. scallops, quartered
    3/4 c. water
    1 tsp. lemon juice
    2 tsp. olive oil
    1 1/2 tsp. red wine vinegar
    1 1/2 tsp. horseradish
    2 drops hot sauce
Preparation
    In 1-quart casserole dish, combine leeks, pepper and garlic. Cover and microwave 2 minutes. Add rice and 3/4 cup water. Stir well and cook 5 minutes, uncovered,
    and 3 minutes covered. Add scallops and cook 3 minutes. Add remaining ingredients; stir and serve.
