Real Chile Verde - cooking recipe

Ingredients
    2 lb. pork chops (lean)
    6 to 7 large green chilies (Anaheim are okay)
    3 large tomatoes
    1 large onion (any color)
    3 large cloves garlic
    vegetable oil
    flour
    salt
Preparation
    Cover bottom of large pot with oil and warm.
    Cube pork; mince garlic and chop onion.
    Put pork, garlic, 1/4 of onion and desired salt in pot and brown; sprinkle 2 tablespoons of flour while stirring and browning meat.
    When brown, turn down heat.
    Chop tomatoes and chilies and add with the rest of the onion to the meat; add 1 quart of water and boil.
    Boil water out 3 times or until all ingredients are very soft.
    Lower heat when thick or add cornstarch.
    Great on burritos, eggs, fried potatoes, rice.
