Sweet Potato Souffle - cooking recipe

Ingredients
    4 c. cooked, mashed sweet potatoes
    1/2 c. butter
    2 eggs, beaten
    1 c. firmly packed brown sugar
    1/4 tsp. salt
    1/4 tsp. cinnamon
    1/4 tsp. nutmeg
    1/4 tsp. ginger
    1/2 c. orange juice
Preparation
    Combine sweet potatoes, butter, eggs, brown sugar, salt and spices; mix well. Add juice, blending until smooth.
    Pour into baking dish and bake at 350\u00b0 for 30 to 40 minutes.
    Top with marshmallows and bake until just melted.
    Yields 8 servings.
