Chocolate Ganache - cooking recipe

Ingredients
    2 c. heavy cream
    4 Tbsp. unsalted butter
    4 Tbsp. granulated sugar
    6 oz. unsweetened chocolate
    4 oz. white chocolate
    12 oz. semi-sweet chocolate
Preparation
    Heat cream, butter and sugar in a 2 1/2-quart saucepan over medium heat.
    Stir to dissolve sugar.
    Bring to a boil.
    Place the semi-sweet, unsweetened and white chocolate in a steel bowl.
    Pour the boiling cream mixture over chocolates.
    Let stand 5 minutes. Stir until smooth.
    Can put in 1 to 2 teaspoons vanilla, pecans or orange rind (optional).
    Refrigerate.
    Cut into bite-size pieces.
