Greek Chicken Salad - cooking recipe
Ingredients

3 c. cubed, cooked chicken
2 medium cucumbers, peeled, seeded and chopped (about 2 1/2 c.)
1 1/4 c. crumbled Feta cheese (5 oz.)
2/3 c. sliced pitted ripe olives
1/4 c. snipped parsley
1 recipe Aiolo or 1 c. mayonnaise, plus 3 cloves garlic, minced
1/2 c. plain yogurt
1 Tbsp. dried oregano, crushed
Boston lettuce leaves
Preparation

In a large mixing bowl, combine chicken, cucumber, Feta cheese, olives and parsley; set aside.
For dressing, in a small mixing bowl, stir together Aioli or mayonnaise and garlic mixture, yogurt and oregano.
Add to the chicken mixture.
Toss mixture gently until coated.
Cover and chill.
Serve on Boston lettuce leaves.
Makes 6 servings.
