Sauerkraut Salad - cooking recipe
Ingredients

1 (No. 2 1/2) can kraut, drained and chopped fine
1/2 c. chopped celery
1 medium onion, chopped (use purple if possible for color)
1 medium bell pepper, chopped
1 small jar pimentos, chopped
1 c. sugar
2/3 c. apple cider vinegar
1/3 c. salad oil
1/2 c. water
Preparation

Bring to just below boiling point and pour over first mixture. Keep in a container that doesn't absorb odors.
This will keep for weeks and will stay crisp.
Especially good for Thanksgiving and Christmas.
