Baked Eggplant - cooking recipe

Ingredients
    1 large eggplant
    cracker crumbs
    vegetable oil
    1 large tomato, skinned
    American cheese
    buttered bread crumbs (optional)
Preparation
    Peel eggplant and slice.
    Dip slices in egg and cracker crumbs and fry in a little oil until brown on both sides; drain on paper towel.
    Place slices in a large flat casserole dish.
    Lay a slice of tomato on top of each slice of eggplant, then lay a slice of American cheese on top of each tomato.* Place in a 350\u00b0 oven until cheese melts.
