Cream Of Spinach Soup - cooking recipe

Ingredients
    1 Tbsp. finely chopped onion
    2 Tbsp. butter
    2 Tbsp. flour
    1 tsp. salt
    1/8 tsp. pepper
    2 pkg. frozen chopped spinach
    2 c. chicken broth
    2 c. half and half cream
Preparation
    Saute onion in butter.
    Add flour, salt and pepper.
    Cook over low heat until smooth and bubbly.
    Add chicken broth.
    Cook until thickened.
    Add spinach.
    Cook briefly until spinach is broken up. Pour into blender and blend.
    Pour back into pan, add cream and heat.
    Do not boil.
    Sprinkle with croutons.
    Serve very hot.
