Red Beans And Rice - cooking recipe
Ingredients

1 lb. red kidney beans
1 1/2 c. chopped onion
3/4 c. celery
1 1/2 bay leaves
3/4 lb. smoked sausage, cut in 1 to 1 1/2-inch lengths
black pepper to taste
1 tsp. dried thyme leaves
6 c. water
1/2 c. chopped green bell pepper
2 cloves garlic or 1 tsp. minced garlic
2 tsp. salt
1 Tbsp. chopped parsley
3/4 tsp. dried oregano leaves
Preparation

Wash and pick beans.
In a large pot, combine beans and water over medium-high heat.
As beans begin to cook, add all remaining ingredients and stir well.
When heated well, turn on low and cook until beans are tender and creamy, stirring occasionally. Water may need to be added during cooking.
Serve over a bed of rice.
