Mexican Corn Bread - cooking recipe
Ingredients

1 1/2 c. yellow corn meal
3 tsp. baking powder
1 c. onion, chopped
1 tsp. salt
2 eggs
2/3 c. vegetable oil
1 c. buttermilk
1 (No. 3) can creamed corn
1 c. grated cheese
2 jalapeno peppers, chopped
Preparation

Mix all ingredients in order except cheese.
Pour half of batter into greased iron skillet; add half of cheese.
Add remaining batter and cover with remaining cheese.
Bake at 350\u00b0 for 45 minutes or until done.
