Chicken Casserole - cooking recipe
Ingredients

1 medium onion, chopped
2 Tbsp. olive oil
1/3 c. wheat berries (get at natural food store)
2 tsp. curry powder
3 c. chicken broth
1 c. brown rice
16 oz. mixed vegetables (peas, corn, carrots and broccoli)
2 c. cubed chicken
Preparation

In a 3-quart Dutch oven, saute onion in oil.
Add wheat berries and curry powder and saute 3 minutes.
Add chicken broth. Bring to a boil; reduce heat.
Cook, covered, for 20 minutes.
Add rice.
Bring back to boil.
Reduce to simmer.
Cook, covered, for 35 minutes.
Stir in vegetables.
Bake, covered, at 350\u00b0 for 35 minutes.
Bake, uncovered, for 5 minutes.
