Meatless Shepherd'S Pie - cooking recipe

Ingredients
    3 c. frozen peas and carrots, thawed
    1 c. frozen chopped onion, thawed
    1 c. frozen chopped green pepper, thawed
    2 tsp. dried thyme
    2 tsp. sweet Hungarian paprika
    olive oil flavored vegetable cooking spray
    4 c. frozen hash browns, thawed
    2/3 c. lite Ricotta cheese
    1/4 tsp. salt
    2 c. drained canned black-eyed peas
    1 c. diced tomato
    1 (8 oz.) can no-salt-added tomato sauce
    2 tsp. low-sodium Worcestershire sauce
    1/4 tsp. salt
    sweet Hungarian paprika
Preparation
    Combine first 5 ingredients; stir well.
    Spoon into a 15 x 10 x 1-inch jellyroll pan coated with cooking spray; coat vegetables with cooking spray.
    Bake, uncovered, at 400\u00b0 for 20 minutes, stirring after 10 minutes; set aside.
