Country Captain Chicken - cooking recipe
Ingredients

2 1/2 or 3 lb. chicken
2 Tbsp. fat
2 Tbsp. Crisco
1 onion, sliced thin
1 green pepper, sliced
1 or 2 garlic gloves, chopped
2 cans tomatoes
1 1/2 tsp. salt
1 tsp. white pepper
1 1/2 tsp. curry powder
1 1/2 tsp. powdered thyme
1/4 c. almonds
1 Tbsp. currants
1 1/2 tsp. chopped parsley
Preparation

Cut up and brown chicken in fat and put aside.
Using a clean pan, brown onions, pepper and garlic in bread.
Add tomatoes and seasonings; cook for 10 minutes.
Place chicken in casserole and pour in sauce, adding fat in which chicken was browned.
Cover with brown paper and lid; bake in a 350\u00b0 oven for 45 minutes. When ready to serve, add blanched and browned almonds and well-washed currants.
Serve with rice.
Serves 4 or 5.
