Pear Preserves - cooking recipe

Ingredients
    1 (5 gal.) bucket pears
    5 lb. sugar
Preparation
    Peel pears and quarter.
    Place in a large pan; cover completely with sugar.
    Cover with chocolate and let set overnight.
    Do not refrigerate.
    Next day cook over medium heat until preserved, then cook slowly until dark brown.
    Place in jars and seal.
