Jambalaya Casserole - cooking recipe

Ingredients
    1/2 onion, chopped
    1/2 green pepper, chopped
    1 clove garlic, minced
    1 rib celery, chopped
    2 Tbsp. vegetable oil
    2 c. meat (total) *
    3 c. boiled rice
    1 (14 1/2 oz.) can whole peeled tomatoes, crushed
    1/4 tsp. thyme
    1/4 tsp. cayenne pepper
    salt and pepper to taste
    1/2 c. minced parsley
Preparation
    *Choose 2 or more from ham, cooked chicken, cooked shrimp, Cajun or Polish sausage, cut into large dice.
